split pea soup

(gluten free, dairy free, vegan)

ingredients:
1 16 oz package (1 lb) dried green split peas, rinsed
3 celery ribs, diced
2 large carrots, diced
2 small potatoes, diced
1 shallot (or onion), diced
1 garlic clove, minced
6 c organic vegetable broth
1 tsp salt, to taste
1 tsp black pepper, to taste
1 tsp parsley
1 bay leaf
sesame seeds

instructions:
1. pour all ingredients in a slow cooker & stir to combine
2. cover & cook on low for 7-8 hours, or high 3-4 hours
3. remove bay leaf halfway through & discard!
4. garnish with sesame seeds for a nutty undertone

this meal is awesome & can be put into the freezer to rewarm later!
